Ingredients

  • 600 g Chicken thighs
  • 2 Onion
  • 2 Tomato
  • 1 tbsp Black peppercorns (whole)
  • 1 tbsp Coriander seeds
  • 20 g Ginger
  • 5 cloves Garlic
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 12 Curry leaves (optional)

Method

  1. Toast the peppercorns and coriander seeds in a dry pan until fragrant, then grind coarse.
  2. Slice the onions, chop the tomato, and grate the ginger and garlic.
  3. Fry the onions in the oil with the curry leaves until deep golden.
  4. Add the ginger-garlic, ground spice, tomato, and chicken and cook until the chicken colors.
  5. Add the salt and a splash of water, cover, and simmer until the chicken is tender and the masala clings, 15 minutes.
  6. Rest briefly and serve.
