About Chicken Club Sandwich
The chicken club is a classic American diner and hotel sandwich, a triple-decker of toasted bread stacked with sliced chicken, crisp bacon, lettuce, tomato, and mayonnaise. Its defining feature is the double layer of bread that divides the fillings into two tiers, giving you the full lineup in every bite and the height that the name implies. It is a substantial, savoury lunch — protein-rich and, with plenty of romaine and tomato, a good amount of fibre too. The appeal lies in the interplay of textures: crunchy toast and bacon, tender chicken, cool crisp lettuce, and juicy tomato bound by mayo.
This version pays attention to the small things that separate a good club from a soggy one. The bacon is cooked first and its rendered fat is used to cook the seasoned chicken breast, so the meat picks up smoky, savoury flavour instead of frying in plain oil. The chicken then rests before being sliced thinly on an angle, which keeps it juicy and easy to stack, while thoroughly drying the lettuce stops the layers from turning damp. Mayonnaise on every toasted surface seals the bread and holds the tower together. Cut into quarters and pinned with picks, it is the sandwich for a proper lunch, a picnic, or any time you want something that eats like a full meal.
