  • 400 g White rice
  • 200 g Chicken breast
  • 2 Egg
  • 2 tbsp Light soy sauce
  • 2 tbsp Neutral oil
  • ½ tsp Salt
  • 3 Scallions (optional)
  • 80 g Snow peas (optional)

Method

  1. Dice the chicken, beat the eggs, and slice the scallions and snow peas.
  2. Scramble the eggs in hot oil until just set, then lift out.
  3. Stir-fry the diced chicken over high heat until cooked through and no longer pink.
  4. Add the rice and snow peas, breaking up any clumps, and toss until hot and a little toasty.
  5. Return the egg, season with the soy and salt, and fold through the scallions.
  6. Spoon into bowls and serve.
