Ingredients

  • 600 g Chicken breast
  • 2 Egg
  • 80 g Almonds
  • 30 g Parmigiano-Reggiano
  • 120 g Arugula
  • 1 Lemon
  • 3 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper (optional)
  • 150 g Cherry tomatoes (optional)

Method

  1. Blitz the almonds to a coarse meal and mix with the grated parmesan on a plate.
  2. Halve the chicken breasts horizontally and pound thin between two sheets of paper.
  3. Beat the eggs in a shallow bowl; dip each cutlet through the egg, then press into the almond crumb.
  4. Fry the cutlets in the oil over medium-high heat until golden and cooked through, about 3 minutes a side.
  5. Toss the arugula and halved tomatoes with the lemon juice and a little pepper.
  6. Sit each cutlet on a pile of the salad and serve with lemon.
