  • 250 g Mushroom
  • 120 ml Chicken stock
  • 30 g Butter
  • 1 tbsp Extra-virgin olive oil
  • 1 Shallot
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 60 ml White wine (optional)
  • 2 Scallions (optional)
  • 1 Lemon (optional)

Method

  1. Pat the chicken breasts dry, then season both sides with salt and pepper.
  2. Heat the olive oil in a wide skillet over medium-high until it shimmers.
  3. Lay the chicken in and sear, turning once, until golden and just cooked through, about 4 minutes per side. Move it to a plate while you build the sauce.
  4. Add the mushrooms to the same pan with a pinch of salt. Cook undisturbed for 2 minutes, then stir and cook until deeply browned.
  5. Stir in the shallot and cook until softened, about 30 seconds. Pour in the white wine and scrape up the browned bits from the pan.
  6. Pour in the chicken stock and simmer gently until reduced by half.
  7. Off the heat, swirl in the cold butter a piece at a time until the sauce turns glossy. Slide the chicken back in to warm through.
  8. Spoon the mushrooms and sauce over the chicken. Scatter scallions on top and serve with a lemon wedge.
