Ingredients

  • 200 g Rigatoni
  • 380 g Chicken breast
  • 320 g Mushroom
  • 18 ml Garlic-infused olive oil
  • 20 g Butter
  • 100 ml Chicken stock
  • 1 tbsp Salt
  • 2 cloves Garlic (optional)
  • 25 g Parmigiano-Reggiano (optional)
  • 2 tbsp Parsley (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Cut the chicken into bite-size pieces and season with salt and pepper. Slice the mushrooms and mince the garlic.
  3. Chop the parsley.
  4. Cook the rigatoni one minute shy of al dente.
  5. While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium-high heat. Sear the chicken until golden and cooked through, about 5 minutes, then lift out.
  6. Add the mushrooms to the same pan and cook, tossing, until deeply golden, about 5 minutes.
  7. Add the garlic and cook until fragrant, about 30 seconds, then pour in the stock and butter and simmer until slightly reduced, about 2 minutes.
  8. Reserve a mugful of pasta water, then drain.
  9. Return the chicken to the pan with the pasta and a splash of pasta water. Toss off heat until glossy.
  10. Finish with the parmesan, parsley, and a final crack of pepper.
