About Chicken Noodle Soup

Chicken Noodle Soup is the American home-kitchen classic, the bowl reached for at the first sign of a cold and the definition of comfort in liquid form. Its foundation is simplicity done right: a mirepoix of onion, carrot, and celery softened in oil, then simmered with chicken, garlic, and bay leaf into a golden, deeply savory broth. Poaching the chicken directly in that broth means the meat and the liquid season each other, so nothing tastes thin or watery.

The pleasure of it is in the textures as much as the flavor — soft sweet vegetables, tender shreds of chicken, and noodles that go in near the end so they stay springy rather than bloated. It's light and restorative rather than heavy, the kind of soup that fills you up without weighing you down. A shower of fresh parsley at the finish keeps it from tasting flat, and a final taste for salt is what separates a good pot from a great one. Ladle it into deep bowls and serve with crusty bread or crackers; it reheats well and only tastes better the next day.
