Ingredients

  • 200 g Rigatoni
  • 330 g Chicken breast
  • 250 g San Marzano tomatoes (DOP)
  • 14 ml Garlic-infused olive oil
  • 110 g Mozzarella
  • 1 tbsp Salt
  • 2 cloves Garlic (optional)
  • 18 g Parmigiano-Reggiano (optional)
  • 1 bunch Basil (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Cut the chicken into bite-size pieces and season with salt and pepper. Mince the garlic.
  3. Grate the mozzarella and tear the basil.
  4. Cook the rigatoni one minute shy of al dente.
  5. While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium-high heat. Sear the chicken until golden and cooked through, about 5 minutes, then push to one side.
  6. Add the garlic to the pan and cook until fragrant, about 30 seconds, then pour in the tomatoes and simmer until slightly thickened, about 6 minutes.
  7. Reserve a mugful of pasta water, then drain.
  8. Tip the pasta into the pan with a splash of pasta water and toss to coat.
  9. Scatter the mozzarella over the top, cover, and let it melt off heat, about 2 minutes.
  10. Finish with the parmesan, basil, and a final crack of pepper.
