- 600 g Chicken breast
- 300 g Spinach
- 2 Lemon
- 2 tbsp Capers
- 3 cloves Garlic
- 2 tbsp All-purpose flour
- 3 tbsp Extra-virgin olive oil
- 0.4 tsp Salt
- 3 tbsp Parsley (optional)
Method
- Halve the chicken breasts horizontally, pound thin, season with salt, and dust lightly with flour.
- Sear the cutlets in 2 tbsp oil until golden and cooked through, then lift out.
- Wilt the spinach with the sliced garlic in the remaining oil in a second pan.
- Deglaze the chicken pan with the lemon juice, capers, and a splash of water, scraping up the bits.
- Return the chicken to the sauce, then serve over the greens with parsley.
