  • 600 g Chicken thighs
  • 300 g White rice
  • 1 Onion
  • 4 cloves Garlic
  • 600 ml Chicken stock
  • 1½ tsp Smoked paprika
  • 2 tbsp Extra-virgin olive oil
  • 1½ tsp Salt
  • ½ tsp Black pepper
  • 1 Bay leaves (optional)

Method

  1. Pat the chicken dry and season all over with salt, pepper, and paprika.
  2. Heat the oil in a wide pan over medium-high. Sear the chicken skin-side down until deeply golden, about 6 minutes, then flip and cook 2 minutes more. Set aside.
  3. While the chicken sears, dice the onion.
  4. While the chicken sears, slice the garlic.
  5. Soften the onion in the chicken fat for 4 minutes until translucent; add the garlic for the last minute.
  6. Stir in the rice to coat in the fat. Pour in the stock, add the bay leaves, and tuck the chicken back in skin-side up.
  7. Bring to a simmer, cover, and cook on the lowest heat for 18 minutes, then rest 5 minutes off the heat.
  8. Lift the chicken out, fluff the rice with a fork, and serve.
