  • 700 g Chicken thighs
  • 500 g Potatoes
  • 3 Carrot
  • 1 Onion
  • 3 cloves Garlic
  • 800 ml Chicken stock
  • 2 tbsp All-purpose flour
  • 30 g Butter
  • 1 tbsp Extra-virgin olive oil
  • 1½ tsp Salt
  • ½ tsp Black pepper
  • 2 Bay leaves (optional)
  • 1 tsp Dried oregano (optional)

Method

  1. Season the chicken with salt and pepper. Chop the onion, carrots, potatoes; mince garlic.
  2. Brown chicken in oil and butter over medium-high, 4 minutes a side. Set aside.
  3. Soften the onion in the pot for 4 minutes. Add garlic and flour; stir 1 minute.
  4. Pour in the stock, scraping up bits. Add bay, oregano, carrots, potatoes, and the chicken. Bring to a simmer.
  5. Cover, lowest heat, 30 minutes until vegetables and chicken are tender.
  6. Check seasoning; remove bay leaves. Serve.
