  • 800 g Chicken thighs
  • 2 Onion
  • 4 cloves Garlic
  • 1 Preserved lemon
  • 80 g Castelvetrano olives
  • 1 tbsp Ras el hanout
  • 1 tsp Saffron
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 4 tbsp Cilantro (optional)

Method

  1. Slice the onion and garlic and rinse and chop the preserved lemon.
  2. Brown the chicken thighs in the olive oil over medium-high heat until golden on both sides, about 8 minutes, then set aside.
  3. Soften the onion and garlic in the same pot, then stir in the ras el hanout and saffron and cook about a minute until fragrant.
  4. Return the chicken with enough water to come halfway up, the preserved lemon, olives, and salt, and braise gently covered until tender, about 35 minutes.
  5. Scatter the cilantro over and serve with couscous or bread.
