- 104 g Fusilli
- 240 g Chicken breast
- 340 g San Marzano tomatoes (DOP)
- 90 g Carrot
- 90 g Celery
- 100 g Onion
- 6 ml Garlic-infused olive oil
- 1 tbsp Salt
- 2 cloves Garlic (optional)
- 8 g Parmigiano-Reggiano (optional)
- 1 bunch Basil (optional)
- ½ tsp Black pepper (optional)
Method
- Finely dice the chicken breast into a rough mince with a knife.
- Finely dice the carrot, celery, and onion. Mince the garlic.
- Warm the garlic-infused oil in a wide pan over medium heat. Add the carrot, celery, and onion and cook, stirring, until softened, about 6 minutes.
- Add the minced garlic and chicken and cook, breaking it up, until no longer pink, about 5 minutes.
- Add the tomatoes, season with salt and pepper, and simmer, stirring occasionally, until thickened, about 15 minutes.
- While the ragù finishes its last few minutes, bring a pot of water to a boil. Salt it.
- Cook the fusilli one minute shy of al dente.
- Reserve a mugful of pasta water, then drain.
- Tip the pasta into the ragù with a splash of pasta water. Toss until coated.
- Finish with the parmesan and torn basil.
