About Chilaquiles Verdes

Chilaquiles verdes is a Mexican breakfast built to give day-old tortillas a second life: crisp fried tortilla triangles are folded into a bright, tangy salsa verde until they soften at the edges but keep some bite. The green sauce here comes from tomatillos, serrano, and garlic charred in a dry pan before blending, a step that trades raw sharpness for a smoky, rounded acidity. It sits at the heart of Mexican home cooking and cantina menus alike, where it doubles as a hangover cure and a way to clear the tortilla drawer.

The pleasure of good chilaquiles is textural contrast: chips that are drenched and tender in places, still crackly in others, all under the cool tug of crema and the salty crumble of queso fresco. A sunny-side-up egg on top lets the runny yolk mingle with the salsa, while raw onion cuts through with a sharp, fresh edge. The key to this version is timing the chips into the simmering salsa at the very last moment so they coat without going to mush. Serve it hot from the pan, ideally with strong coffee, and eat it before the chips lose their character.
