About Chili con Carne
Chili con carne is the Tex-Mex bowl of slow-simmered beef and beans that borders Texas and northern Mexico claim in their own ways. This version leans into the crowd-pleasing style with black beans, canned tomatoes, and a warm spice base of chili powder, cumin, and smoked paprika. Browning the ground beef hard before anything else is what builds the deep, savory backbone, developing fond in the pan that dissolves into the sauce. It is honest, one-pot cooking meant to feed a table of six without fuss.
The reward is a thick, brick-red chili that tastes far older than its hour of cooking, the spices bloomed in oil so they read as fragrant rather than dusty. Roughly three-quarters of an hour of gentle simmering lets the beef go tender and the tomato reduce into something rich and clinging, while the beans add body and fiber. It is a natural fit for cold nights, game days, and casual gatherings, and it welcomes a spread of toppings: shredded cheese, sour cream, raw onion, or a fistful of crushed tortilla chips. Leftovers only improve overnight as the flavors settle.
