  • 300 g Ground beef
  • 3 Tomato
  • ½ Onion
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 2 tbsp Soy sauce
  • 1 tsp Sugar
  • 2 tbsp Neutral oil
  • ½ tsp Black pepper
  • 300 g Rice (optional)
  • 2 Scallions (optional)
  • 1 tsp Toasted sesame oil (optional)

Method

  1. Rinse the rice and cook it in twice its volume of water, covered, until tender and the water is absorbed, about 15 minutes.
  2. While the rice cooks, cut the tomatoes into wedges and thinly slice the onion. Mince the garlic and grate the ginger.
  3. Heat some of the neutral oil in a wide pan over high. Add the tomato wedges in a single layer and sear until softened with some char, about 3 minutes, then lift to a plate.
  4. Add the remaining oil. Brown the beef hard, breaking it up, until well coloured, about 4 minutes.
  5. Add the onion, garlic, and ginger and stir-fry until fragrant, about 1 minute.
  6. Return the tomatoes and pour in the soy, sugar, and black pepper. Toss until glossy and the tomatoes are saucy but still hold their shape, about 2 minutes.
  7. Off the heat, drizzle with the sesame oil. Spoon over the rice and scatter the scallions on top.
