  • 1 Low-carb tortillas
  • 160 g Chicken breast
  • 30 g Bacon
  • 1 Egg
  • 1 tbsp Olive oil
  • 80 g Avocado (optional)
  • 30 g Cheddar cheese (optional)
  • 50 g Romaine lettuce (optional)
  • 50 g Tomato (optional)
  • 1 tbsp Red wine vinegar (optional)

Method

  1. Lower the egg into boiling water, give it eight minutes, then cool it under a running tap and peel it.
  2. Split the chicken breast into two flat pieces so it cooks evenly, and cut the bacon into short strips.
  3. Crisp the bacon in a dry pan for four minutes and lift it out, then cook the chicken in the fat it leaves, five minutes a side, until browned and firm to the press.
  4. Shred the romaine, dice the tomato, slice the avocado, and whisk the olive oil into the red wine vinegar until the dressing thickens a little.
  5. With the chicken still browning, warm the low-carb tortilla in a dry pan for a minute a side so it will take the roll without tearing.
  6. Turn the romaine through the dressing and lay it along the warm tortilla. Slice the chicken and the peeled egg, then arrange them in stripes with the tomato, avocado, bacon and crumbled cheddar, the way a Cobb is laid out in a bowl.
  7. Roll it up tightly, cut it on the bias and stand the halves cut-side up so the stripes show.
