- 4 Zucchini
- 1 Onion
- 800 ml Vegetable stock
- 3 tbsp Mint
- 1 tbsp Extra-virgin olive oil
- ¾ tsp Salt
- 2 cloves Garlic (optional)
- ½ Lemon (optional)
Method
- Slice the zucchini and onion; mince the garlic.
- Soften the onion and garlic in the oil over medium heat without browning, about 4 minutes.
- Add the zucchini, stock, and salt and simmer until the zucchini is completely soft, about 12 minutes.
- Blend the soup smooth with the mint and a squeeze of lemon.
- Ladle into bowls and serve hot, or chill and serve cold.
