Couscous with Merguez

Ingredients
- 300 g Couscous
- 400 g Merguez sausage
- 2 Carrot
- 1 Zucchini
- 1 tin Chickpeas
- 1 tbsp Ras el hanout
- 700 ml Vegetable stock
- 1 tbsp Harissa
- 3 tbsp Extra-virgin olive oil
- 1 tsp Salt
Method
- Chunk the carrots and zucchini into bite-size pieces.
- Bring the vegetable stock to a simmer in a pot with the carrots, zucchini, chickpeas, ras el hanout, and salt. Simmer gently until the vegetables are tender.
- While the vegetables simmer, brown the merguez in a dry pan over medium-high heat, turning, until crisp outside and cooked through.
- While the merguez cooks, pour just-boiled water over the couscous to cover, cover the bowl, and let it steam 5 minutes, then fluff with a fork and the olive oil.
- Pile the couscous into bowls, ladle over the vegetables and broth, top with the merguez, and serve the harissa alongside.
