Ingredients

  • 200 g Couscous
  • 1 Lemon
  • 1 Cucumber
  • 3 tbsp Extra-virgin olive oil
  • ¾ tsp Salt
  • 150 g Cherry tomatoes (optional)
  • 4 tbsp Parsley (optional)
  • 2 Scallions (optional)

Method

  1. Pour boiling water over the couscous and half the salt in a heatproof bowl until just covered, then cover it tightly.
  2. Let the covered couscous stand to absorb the water.
  3. Fluff the couscous thoroughly with a fork to separate the grains.
  4. While the couscous stands, dice the cucumber into small pieces.
  5. Halve the cherry tomatoes.
  6. Slice the scallions and chop the parsley.
  7. Toss the couscous with the vegetables, the lemon zest and juice, and the olive oil; taste and adjust the salt.
  8. Serve the salad at room temperature — it holds beautifully for lunchboxes.
