  • 500 g Chicken thighs
  • 8 cloves Garlic
  • 200 ml Chicken stock
  • 150 ml Heavy cream
  • 30 g Butter
  • 1 tbsp Extra-virgin olive oil
  • 1 tbsp All-purpose flour
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1 tsp Dried oregano (optional)

Method

  1. Pat the chicken dry and season with salt and pepper. Smash and roughly chop the garlic.
  2. Sear the chicken in the oil and butter over medium-high, about 5 minutes a side. Set aside.
  3. Lower the heat. Add the garlic to the pan and cook for 2 minutes until soft. Sprinkle in the flour and stir for 1 minute.
  4. Pour in the stock and cream and add the oregano. Simmer to thicken, about 3 minutes.
  5. Nestle the chicken back in and baste with the sauce for 2 more minutes. Serve hot.
