- 800 g Canned tomatoes
- 1 Onion
- 4 cloves Garlic
- 400 ml Chicken stock
- 150 ml Heavy cream
- 30 g Butter
- 1 tbsp Extra-virgin olive oil
- 1 tsp Dried oregano
- 1 tsp Salt
- ½ tsp Black pepper
- 1 tsp Sugar (optional)
Method
- Chop the onion; smash the garlic.
- Soften the onion in the butter and oil over medium heat for 6 minutes. Add the garlic and oregano and cook for 1 minute more.
- Add the tomatoes, stock, salt, pepper, and the sugar. Simmer for 15 minutes.
- Blitz smooth with a stick blender, or carefully in a jug blender.
- Stir in the cream and warm through for 1 minute. Do not let it boil. Serve hot.
