About Creamy Tomato Soup
Creamy tomato soup is the archetypal comfort soup—smooth, warm, the taste of childhood rendered in a bowl. Onion and garlic are sweated slowly until they soften, then tomatoes and stock are added and simmered together, breaking down into a unified base that's blended until there's not a single piece of anything visible. The cream is stirred in at the very end, carefully, so it warms through without curdling, making the soup taste almost indulgent while keeping it light enough that you don't feel heavy after.
Thirty minutes of mostly passive cooking yields four bowls of soup that tastes like you made stock from scratch. The sugar is not about sweetness—it's there to balance the tomato's acidity the way a pinch of baking soda might, making the soup taste rounder and less sharp. The oregano ties everything together with a whisper of herbal warmth. This is the soup you serve with grilled cheese or bread and butter, or on its own as a lunch that makes you feel cared for. It freezes beautifully if you skip the cream and add it fresh after reheating, making it a reliable weeknight standby.
