Method

  1. Whisk the flour, two of the eggs, the milk, and salt into a thin, smooth batter and let it rest.
  2. Cook a thin galette in a little of the butter over medium heat until set, then scatter over the ham and grated cheese.
  3. Crack a whole egg into the centre, fold the edges in to make a square, and cook until the white is set but the yolk still runs.
  4. Serve hot, repeating with the second galette.
