- 200 g All-purpose flour
- 3 Egg
- 500 ml Milk
- 40 g Butter
- ¼ tsp Salt
- 1 tbsp Sugar (optional)
Method
- Whisk the flour, eggs, milk, sugar, and salt into a smooth thin batter.
- Rest the batter 20 minutes so it relaxes.
- Melt a little butter in a hot non-stick pan over medium heat. Pour in about a ladleful of batter (around 60ml for a 20cm pan) and immediately swirl the pan so it coats the base in a thin, even layer. Cook until the edges lift and the underside is lightly golden, about 1 minute, then flip and cook 20–30 seconds more. Repeat with the rest of the batter.
- Fold each crêpe around your chosen filling and serve warm.

About Crepes
Crêpes are the fundamental French sweet preparation: paper-thin, tender pancakes that are blank canvas enough to hold whatever filling strikes your fancy. The batter is whisked together from flour, eggs, milk, and a touch of sugar and butter, then rested for twenty minutes so the gluten relaxes and the crepes become tender rather than springy. They cook on high heat, the pan swirled immediately so the batter spreads thin and even, barely a minute on each side until the edges brown and lift. The result is lacy, delicate, more textured than a crêpe that's too thin.
Thirty minutes yields a small stack that can sit at room temperature until you're ready to fill them, making these perfect for breakfast or dessert when you want something that feels special but isn't fussy. They take both sweet fillings—jam, nutella, sugar and butter—and savory ones equally well, folded or rolled to showcase whatever goes inside. The thinness is key: they're not pancakes, which are substantial and cakey, but something more delicate and refined. Whether you fill them with fresh berries and cream or ham and cheese, crêpes taste like you've gone to some effort, even though the actual work is minimal and mostly passive.
