  • 150 g Jamon serrano
  • 750 ml Milk
  • 80 g Butter
  • 100 g All-purpose flour
  • 1 Onion
  • ½ g Nutmeg
  • 2 Egg
  • 200 g Breadcrumbs
  • 500 ml Extra-virgin olive oil
  • ½ tsp Salt

Method

  1. Mince the onion fine.
  2. Warm the milk over low heat. Do not let it boil.
  3. While the milk warms, chop the jamón into tiny pieces.
  4. Melt the butter in a wide pan over medium-low heat. Sweat the minced onion until translucent.
  5. Whisk in the flour and cook the roux until it smells biscuity, not toasted.

  12. While breading, heat the olive oil in the Dutch oven to 190 °C (375 °F).
  13. Fry the croquetas in small batches, turning, until deeply golden. Drain on paper towels.
  14. Serve immediately — the centre must be molten when broken open.
