Ingredients

  • 110 g Wheat noodles
  • 200 g Chicken breast
  • 350 ml Chicken stock
  • 1 tbsp Light soy sauce
  • ½ Zucchini (optional)
  • 1 Egg (optional)
  • 3 cloves Garlic (optional)
  • 1 Scallions (optional)
  • 1 tsp Toasted sesame oil (optional)

Method

  1. Cut the courgette into half-moons the thickness of a coin, smash and chop the garlic, slice the scallion on a long angle and beat the egg loose in a small dish.
  2. Bring the stock up with the garlic and lower the whole chicken breast into it, holding it at a lazy simmer until the meat is firm and no pink juice runs when you pierce it.
  3. Lift the chicken out onto a board and pull it into coarse strands with two forks.
  4. Add the courgette to the broth with the soy and simmer until the slices go translucent at the edges, then trail the beaten egg through the surface in a thin stream.
  5. Boil the noodles hard in a second pan of unsalted water, then drain them without rinsing so they keep their surface starch.
  6. Pile the noodles into a deep bowl, lay the shredded chicken over them and ladle the broth and courgette on top. Finish with the scallion and a thread of sesame oil.
