- 1 Low-carb tortillas
- 200 g Chicken thighs
- 1 tbsp Tahini
- 70 g Avocado
- 1 tsp Olive oil
- ½ tsp Aleppo pepper
- ¼ Lemon
- ¼ tsp Salt
- 8 g Parsley (optional)
Method
- Open the chicken thighs out flat, trim away any hard pads of fat, and rub them all over with the Aleppo pepper and the salt.
- Whisk the tahini with the juice of the lemon quarter and enough cold water to bring it back to a pouring cream, then slice the avocado and chop the parsley.
- Heat the olive oil in a heavy pan until it ripples, lay the thighs down cut side first and leave them six minutes without moving them, then turn and give them five more until the juices run clear and the outsides are properly bronzed.
- Move the thighs to a board for three minutes. Thigh meat tightens over the heat and slackens again as it sits, and cutting it straight from the pan squeezes the fat out onto the board.
- While the thighs rest, pass the low-carb tortilla over a low flame in another pan until it slackens — a minute a side, no more.
- Slice the chicken thickly and lay it across the warm tortilla, fan the avocado beside it, spoon over the tahini and scatter the parsley before folding the ends in and rolling.
- Halve it and eat it in the hand, with a bowl held underneath for the tahini that escapes.
