Doenjang Jjigae
Soybean-paste stew

Ingredients
- 3 tbsp Doenjang
- 300 g Firm tofu
- 1 Zucchini
- 150 g Button mushrooms
- 1 Potatoes
- 3 cloves Garlic
- 1 Kombu (dried kelp)
- 2 Scallions (optional)
- 1 tsp Gochugaru (optional)
Method
- Mince the garlic.
- Simmer the kombu in a pot of water over medium heat for a few minutes to make a light broth, then lift out the kombu and whisk in the doenjang, gochugaru, and minced garlic.
- While the broth comes together, cube the potato.
- While the broth comes together, cube the zucchini.
- Simmer the potato and zucchini in the broth until tender, about 10 minutes.
- While the stew simmers, cube the tofu.
- While the stew simmers, slice the mushrooms.
- While the stew simmers, thinly slice the scallions for garnish.
- Add the tofu and mushroom and warm through until heated.
- Scatter the scallions and serve with rice.
