- 600 g White fish
- 4 cloves Garlic
- 1 tbsp Sherry vinegar
- 4 tbsp Olive oil
- 0.4 tsp Salt
- 1 Dried chilies (optional)
- 10 g Parsley (optional)
- 1 Lemon (optional)
Method
- Season the butterflied fish with the salt.
- Griddle the fish flesh-side down first, then skin-side, until just cooked, 8 minutes, and plate.
- Sizzle the sliced garlic and chili in the olive oil until gold, take off the heat, and add the vinegar.
- Pour the refrito over the fish and finish with parsley and lemon.
