  • 4 cloves Garlic
  • 1 tbsp Sherry vinegar
  • 4 tbsp Olive oil
  • 0.4 tsp Salt
  • 1 Dried chilies (optional)
  • 10 g Parsley (optional)
  • 1 Lemon (optional)

Method

  1. Season the butterflied fish with the salt.
  2. Griddle the fish flesh-side down first, then skin-side, until just cooked, 8 minutes, and plate.
  3. Sizzle the sliced garlic and chili in the olive oil until gold, take off the heat, and add the vinegar.
  4. Pour the refrito over the fish and finish with parsley and lemon.
