Ingredients

  • 120 g Edamame noodles
  • 240 g Beef sirloin
  • 150 g Bok choy
  • ½ tsp Sichuan peppercorn
  • 2 tsp Chinkiang black vinegar
  • 1 tbsp Toasted sesame oil
  • 2 tsp Light soy sauce (optional)
  • 10 g Ginger (optional)

Method

  1. Take the sirloin out of the fridge and season it. Toast the sichuan peppercorns in a dry pan until they smell citrussy, then crush them. Split the pak choi and grate the ginger.
  2. Sear the sirloin in half the sesame oil over the highest flame, three minutes a side for rare, then move it to a board to rest.
  3. While the beef rests, drop the pak choi and ginger into the same pan with the soy and black vinegar and turn for three minutes, until the stems soften and the vinegar goes syrupy against the pan.
  4. Boil the edamame noodles four minutes in unsalted water and drain, keeping back a splash of the water.
  5. Fold the noodles into the greens with the reserved splash, slice the beef thinly across the grain and fan it over with the board juices, then scatter the crushed sichuan pepper.
