- 100 g Edamame noodles
- 200 g Beef sirloin
- 150 g Bok choy
- 12 g Ginger
- 1 tbsp Toasted sesame oil
- 2 tsp Japanese soy sauce (koikuchi shoyu) (optional)
- 2 tsp Mirin (optional)
- 20 g Scallions (optional)
Method
- Take the sirloin out of the fridge and season it on both faces. Grate the ginger, split the pak choi and cut the spring onions into long shreds.
- Sear the sirloin in half the sesame oil over the highest flame, two and a half minutes a side for rare, then move it to a board.
- Leave the beef to rest five minutes. Meanwhile drop the ginger and pak choi into the same pan with the soy and mirin and turn them until the stems soften and take on the pan's colour.
- Boil the edamame noodles four minutes in unsalted water and drain them, keeping a splash of the water back.
- Fold the noodles into the greens with the reserved splash, slice the rested beef thinly across the grain and lay it over with everything left on the board, then finish with the shredded spring onion.
