  • 2 Corn tortillas
  • 3 Egg
  • 150 g Potatoes
  • 2 tsp Garlic-infused olive oil
  • 50 g Spinach (optional)
  • 5 g Dill (optional)
  • ¼ tsp Black pepper (optional)

Method

  1. Cut the potato into cubes no bigger than a sugar lump so they are cooked through before the outsides burn. Beat the three eggs with the ground black pepper and chop the dill.
  2. Cook the potato in the garlic-infused oil over a medium heat for twelve minutes, disturbing it only every few minutes so each cut face has time to crisp.
  3. Stir the spinach through the potato until it collapses, drop the heat as low as it goes and pour in the eggs, moving them slowly until they set in big soft folds. Pull the pan off while they still look a little underdone.
  4. In the minutes the eggs need to set, blister the two corn tortillas in a dry pan and fold them into a cloth so they stay pliable.
  5. Carry the pan and the warm tortillas to the table with the dill to scatter, and let each taco be filled just before it is eaten.
