Ingredients

Servings 2
  • 400 g Ground pork
  • ½ head Cabbage
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 3 tbsp Soy sauce
  • 1 tbsp Neutral oil
  • 1 Carrot (optional)
  • 1 tbsp Toasted sesame oil (optional)

  • 1 tbsp Rice vinegar (optional)

Method

  1. Shred the cabbage, grate the carrot, mince the garlic and ginger, and slice the scallions.
  2. Brown the pork hard in the oil in a wide skillet over medium-high heat, breaking it into crumbles, about 5 minutes.
  3. Stir the minced garlic and ginger into the pork and cook until fragrant, about 30 seconds.
  4. Add the shredded cabbage and grated carrot and stir-fry until the cabbage wilts but keeps some bite, about 4 minutes.
  5. Season the pan with the soy sauce and rice vinegar and toss to coat everything evenly.
  6. Finish with the sesame oil and sliced scallions and serve as is or over rice.

About Egg Roll in a Bowl

Egg roll in a bowl is a deconstructed take on the deep-fried Chinese-American egg roll, keeping the savory ground-pork-and-cabbage filling but skipping the wrapper entirely. The result is a fast, low-carb skillet dinner that tastes like the inside of the thing you love, ground pork browned hard and glazed with soy, ginger, garlic, and a splash of rice vinegar, tossed with shredded cabbage and carrot that keep some crunch. It is a weeknight invention rather than a traditional dish, but it earns its place by delivering the same flavor in about fifteen minutes and a single pan.

The eating experience is warm, savory, and gingery with a little tang, the cabbage wilted just enough to soften while holding its bite, and the pork carrying a glossy soy glaze. The technique that makes it work is browning the pork hard first so it develops real color and flavor before the aromatics and vegetables go in, then hitting everything with soy and vinegar at the end so nothing steams into blandness. Sesame oil and raw scallion greens finish it with fragrance. Eat it as is for a light, protein-heavy meal, or spoon it over rice to make it more filling, and a drizzle of sriracha or chili crisp is a natural addition.
