- 2 cloves Garlic
- 1 tbsp Sherry vinegar

Method
- Roast the whole peppers until blackened all over.
- While the peppers roast, thinly slice the garlic.
- Seal the blackened peppers in a covered bowl about 10 minutes to steam and loosen the skins.
- Peel the steamed peppers, discard the skins and seeds, and tear into strips.
- Dress the warm peppers with the sliced garlic, vinegar, oil, and salt.
- Let the peppers rest 15 to 20 minutes to cool to room temperature, mellow the garlic, and absorb the dressing.
- Serve at room temperature.
