Method

  1. Heat the oven to 220C (425F).
  2. Roast the whole peppers, eggplant, and onion until blackened and collapsed, about 35 minutes.
  3. Peel and tear the vegetables into strips while still warm.
  4. Dress with the olive oil, crushed garlic, vinegar, and salt and serve at room temperature.
