About Esgarraet

Esgarraet is a Valencian appetizer whose name comes from the local word for torn or shredded, describing how both the roasted peppers and the salt cod are pulled into rough strips by hand. It marries just a few strong ingredients: sweet, smoky roasted red peppers and desalted bacalao, the air-dried salt cod that is a pillar of Spanish cooking. The cod brings a firm, savory, faintly briny quality that plays against the soft sweetness of the peppers, while raw garlic and a generous amount of olive oil tie the two together into something greater than its parts.

The dish demands patience where it counts: the salt cod must soak in cold water in the fridge for around a day, with the water changed several times, to draw out enough salt that it becomes pleasantly savory rather than harsh. Once the peppers are roasted, peeled, and torn, the assembly is quick, and a rest at room temperature lets the flavors marry and the garlic soften. Low in carbs and served cool with plenty of crusty bread to mop up the oil, esgarraet is classic tapas fare, best made ahead so it can sit and come together before serving.
