About Garlic Spinach Saute
This Garlic Spinach Sauté is a stripped-down Spanish side in the Catalan mold, wilting fresh spinach with sliced garlic, sweet raisins, and toasted pine nuts in olive oil. It is the kind of everyday vegetable that Spanish home cooks lean on precisely because it asks for almost nothing and delivers a lot, going from raw leaves to finished dish in about twelve minutes. Vegan and light, it works as a fast partner to almost any protein or as one plate in a larger meze-style spread.
The eating experience is all contrast: sweet chewy raisins against crisp, resinous pine nuts, with mellow gold garlic tying the tender greens together. The order of operations is what keeps it clean here, since toasting the pine nuts first and pulling them onto a plate stops them overcooking, and frying the garlic only until pale gold keeps it fragrant rather than acrid. Because the spinach is barely wilted rather than stewed, it holds its color and freshness, making this a good bright side for grilled meats, roasted fish, or a simple bowl of beans.
