  • 250 g Farro
  • 300 g Mushroom
  • 1 Onion
  • 2 cloves Garlic
  • 1000 ml Vegetable stock
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 40 g Parmigiano-Reggiano (optional)
  • 20 g Butter (optional)
  • 1 tsp Thyme (optional)

Method

  1. Slice the mushrooms and dice the onion; mince the garlic.
  2. Brown the mushrooms in the oil over high heat until golden, then scoop them out.
  3. Soften the onion and garlic in the same pan, then stir in the farro and toast it for a minute.
  4. Add the stock a ladle at a time with the salt, stirring often, until the farro is tender and creamy, about 30 minutes.
  5. Stir the mushrooms back in with the butter, parmesan, and thyme.
  6. Spoon into bowls and serve hot.
