About Fennel & White Fish Broth
Fennel and white fish broth is a light Mediterranean soup in the tradition of gentle poached-fish dishes found along the coast, where delicate seafood is treated simply so its freshness comes through. A flaky white fish fillet is poached in a clear, aromatic broth built from fennel and leek softened slowly in olive oil, with fish stock as the base. What defines it is restraint: nothing is browned, nothing is heavy, and the anise sweetness of the fennel infuses the liquid rather than any cream or roux weighing it down.
The bowl is clean and quietly elegant — a fragrant, low-fat broth with tender fennel, silky leek, and fish that flakes at the touch of a spoon, all brightened at the end with lemon and fresh parsley. It is soothing, gentle on the stomach, and the kind of thing you reach for when you want something nourishing rather than indulgent. Poaching the fish directly in the finished broth, rather than cooking it separately, keeps it moist and lets its flavor become part of the soup. Serve it on its own as a light supper, or with crusty bread to make it more filling.
