About Fideos a la Cazuela
Fideos a la cazuela is a Spanish one-pot noodle stew, named for the earthenware cazuela it is traditionally cooked in, and part of the country's long tradition of short-noodle dishes that treat pasta the way others treat rice. Short wheat noodles are toasted in oil and then simmered directly in a smoky broth built from cooking chorizo, tomato, and sweet pimentón, so the noodles absorb the flavor as they cook rather than being boiled separately and sauced. The chorizo does double duty here — its rendered fat becomes the cooking medium, staining the whole pot orange and lending a deep, paprika-driven smokiness.
The result is homey and deeply savory: soft noodles in a thick, brothy tomato sauce shot through with the spice and richness of the sausage, the kind of unfussy comfort food that turns up on Spanish family tables. Toasting the noodles before they simmer is the step that matters, giving them a nutty backbone and keeping them from turning mushy in the broth. Left to rest off the heat for a couple of minutes, it settles into a satisfying stew rather than a soup. It is filling enough to be a complete meal on its own, needing little more than bread and perhaps a green salad alongside.
