  • 300 g Wheat noodles
  • 300 g Squid
  • 250 g Shrimp
  • 8 g Squid ink
  • 2 Tomato
  • 4 cloves Garlic
  • 800 ml Fish stock
  • 4 tbsp Extra-virgin olive oil
  • 1 tsp Salt

Method

  1. Clean and slice the squid; grate the tomato and mince the garlic.
  2. Sear the squid in the oil in a wide pan until lightly coloured, then add the tomato and garlic and cook down into a soft base.
  3. Add the noodles and toast them in the oil, stirring, until golden.
  4. Stir in the squid ink, salt, and hot stock and simmer until the noodles are tender.
  5. Nestle the shrimp into the noodles for the last few minutes until pink and cooked through.
  6. Serve with aioli.
