Amritsari Fish
Crisp battered fish spiced with fennel and chilli.

Ingredients
- 600 g White fish fillet
- 120 g Besan (chickpea flour)
- 1 Ginger
- 4 cloves Garlic
- 1 tsp Red chili powder
- 1 tsp Fennel seeds
- 1 Lemon
- 400 ml Neutral oil
- 1 tsp Salt
Method
- Cut the fish into finger-sized pieces; grate the ginger and garlic.
- Whisk the besan with the ginger-garlic, chili powder, fennel seeds, lemon, salt, and a little water into a thick, smooth batter, then fold the fish through to coat.
- Heat the oil in a deep pan until shimmering and fry the battered fish in batches until golden and crisp.
- Lift the fish out and drain on paper towels.
- Serve hot with lemon and chutney.
