  • 100 g Breadcrumbs
  • 1 Egg
  • 3 tbsp Flour
  • 4 slices Bread
  • 3 tbsp Mayonnaise
  • 5 tbsp Neutral oil

Method

  1. Cut the white fish into thick fingers and season them with the salt.
  2. Set out three shallow dishes: the flour in one, the beaten egg in the next, the breadcrumbs in the last.
  3. Coat each fish finger in flour, then egg, then breadcrumbs, pressing the crumbs on firmly.
  4. Heat the oil in a wide skillet over medium-high until it shimmers.
  5. Shallow-fry the fingers until deep gold and cooked through, about 3 minutes a side, then drain them on paper.
  6. While the fingers fry, stir the chopped pickles and lemon juice into the mayonnaise to make a quick tartar sauce.
