About Fish Tagine
Fish tagine is the seafood version of Morocco's iconic slow-cooked braise, named for the conical earthenware pot in which such dishes are traditionally made. It carries the same green chermoula backbone found across Moroccan fish cookery, cilantro, garlic, cumin, and smoked paprika brightened with lemon, but here the paste seasons a gentle braise rather than a roast. Sliced potato and tomato line the pot as a bed, the fish rests on top, and briny Castelvetrano olives punctuate the whole thing.
Cooked low and covered, the vegetables steam soft while the fish stays moist and flakes cleanly, and the potato at the bottom soaks up the tomato juices and chermoula into something almost stew-like. The flavor is warm and tangy with the smoke of paprika and the salty pop of green olives against sweet tomato. It is meant to be brought to the table in its pot and shared, with plenty of bread to mop the sauce, making it a generous, communal main that needs little else beyond the loaf.
