  • 5 Egg
  • 400 ml Milk
  • 200 ml Heavy cream
  • 200 g Sugar
  • 1 tsp Vanilla

Method

  1. Heat the oven to 160C (320F). In a pan, cook half the sugar to a dark amber caramel, then pour it into the mould.
  2. Whisk the eggs, milk, cream, the rest of the sugar, and vanilla into a smooth custard.
  3. Pour the custard over the set caramel and bake in a water bath until just set with a gentle wobble, about 50 minutes.
  4. Cool, then chill thoroughly in the fridge until fully set, about 3 hours.
  5. Turn out onto a plate and serve cold with the caramel on top.
