Freekeh Pilaf
Smoky freekeh with caramelised onion and toasted almonds.

Ingredients
- 300 g Freekeh
- 2 Onion
- ½ tsp Allspice
- 1 Cinnamon stick
- 700 ml Vegetable stock
- 4 tbsp Extra-virgin olive oil
- 1 tsp Salt
- 50 g Almonds (optional)
Method
- Slice the onions thinly.
- Caramelise the onions in the olive oil until deep brown, reserving some for garnish.
- While the onions caramelise, rinse the freekeh in a sieve until the water runs clear, then drain.
- Toast the freekeh with the allspice and cinnamon in the pot until fragrant, then add the stock and salt.
- Cover and simmer until the freekeh is tender and the stock is absorbed.
- Top with the toasted almonds and reserved onions.
