Ingredients

  • 8 Egg
  • 2 Zucchini
  • 150 g Frozen peas
  • 40 g Parmigiano-Reggiano
  • 1 Onion
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 2 tbsp Mint (optional)
  • 100 g Ricotta (optional)

Method

  1. Heat the oven grill. Dice the onion and zucchini.
  2. Soften the onion and zucchini in the oil in an ovenproof pan, then stir in the peas.
  3. Beat the eggs with the parmesan, salt, and mint; pour over the vegetables and cook until the base sets.
  4. Dot with ricotta and slide under the grill until puffed and just set on top, 4 minutes.
  5. Slide onto a board, cut into wedges, and serve warm.
