  • 65 g Fusilli
  • 190 g Shrimp
  • 130 g Zucchini
  • 1 tbsp Garlic-infused olive oil
  • ½ Lemon
  • 8 g Parsley (optional)
  • ¼ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Cut the courgette into thin half-moons, blot the prawns dry and chop the parsley.
  3. Warm the garlic-infused oil over a medium flame and cook the courgette six minutes, pressing it down now and then, until it softens and starts to break into a loose sauce.
  4. Raise the heat and add the prawns for ninety seconds a side, until they curl tight, then kill the heat and squeeze in the lemon.
  5. Cook the fusilli in the boiling water until it still has a firm centre, about ten minutes, then drain it, saving a ladleful of the water.
  6. Toss the pasta through the pan with a splash of the water until the courgette clings to it, then grind over the pepper and scatter the parsley.
