Ingredients
- 700 g Chicken thighs
- 1 Ginger
- 3 cloves Garlic
- 2 Shallot
- 4 tbsp Fish sauce
- 4 tbsp Sugar
- ½ tsp Black pepper
- 2 Scallions (optional)
Method
- Cut the chicken into bite-sized pieces; julienne the ginger and mince the garlic and shallot.
- In a heavy pot over medium heat, melt the sugar and cook it to a dark amber caramel, swirling and watching closely so it does not burn.
- Add the chicken, ginger, garlic, shallot, and fish sauce to the caramel and stir over medium heat until the chicken is well coated and lightly seared on all sides.
- Pour in a splash of water, add the black pepper, lower the heat, and braise gently, covered, until the sauce is glossy and the chicken is tender.
- While the chicken braises, thinly slice the scallions.
- Scatter the sliced scallions over the chicken and serve with rice.
