- 170 g Konjac rice
- 180 g Shrimp
- 110 ml Coconut milk
- 25 g Red curry paste
- 1½ tbsp Peanut oil
- 12 g Thai basil
- 2 tsp Fish sauce
- 15 g Bell pepper (optional)
Method
- Peel the prawns, slice the pepper into strips and pick the basil leaves.
- Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
- Heat the peanut oil in a pan over medium with the thick cream from the top of the coconut milk, and fry the red curry paste for 3 minutes until it darkens and the oil separates out red around the edges.
- Pour in the remaining coconut milk with the pepper strips and bring to a bare simmer for 4 minutes, keeping it below a boil so it stays smooth.
- Slip in the prawns and cook 2 minutes only, until they turn pink. Take the pan off the heat and stir in the fish sauce and basil.
- Spread the konjac rice in a bowl and ladle the red curry and prawns over it with all the split red oil.
